Power Pops

Power in, power out! Whip up these protein packed snacks for an on-the-go energy blast. 

What You Need: 

  • Ingredients 
  • Bowl 
  • Spatula 
  • Measuring utensils 
  • Baking sheet 
  • Parchment paper 
  • Popsicle sticks or paper straws 

What You Do: 

  1. Wash your hands, gather all your ingredients and roll out a piece of parchment paper on a baking sheet. 
  2. Mix dry ingredients in a large bowl. 
    • 1 ¼ C oats 
    • ¼ C chocolate chips 
    • 2 T chia seeds 
    • ½ t cinnamon 
    • ¼ t salt 
  3. Add the wet ingredients and mix with your hands. 
    • ¾ C peanut butter 
    • ¼ C honey 
    • ½ t vanilla extract 
  4. Scoop a spoonful about 2T into your hands and roll into a ball. Add a popsicle stick or paper straw and place on the baking sheet.  
  5. Once all ingredients are rolled into pops, refrigerate for 30 minutes and enjoy! 

Change It Up:  

  • Nut free? Substitute sun butter for peanut butter. 
  • Vegan? Substitute maple syrup for honey and cranberries for chocolate chips. 
  • Make it party style. Roll your Power Pops in cocoa powder or sprinkles for a festive treat.
